EVOO is a key component of the Mediterranean diet. Numerous studies have shown that EVOO can be used to improve risk factors for chronic diseases. This lecture will present the literature on the health benefits of olive oil and provide practical info on how to include more EVOO in your diet.

Mary Flynn, PhD, RD, LDN, is a nutritionist who works in human nutrition research at  Miriam Hospital and teaches nutrition at Brown. Her main research interest is how food can be used to prevent and treat chronic diseases or Food is Medicine.

She developed a plant-based olive oil diet. She used the diet to develop a 6-week cooking program for low-income clients. She showed that use of plant-based recipes that include EVOO for 2 to 3 main meals a week will decrease body weight, fasting blood glucose and also decrease food costs and food insecurity.
